Our Academy organizes Italian cooking courses abroad with prestigious hotel chains and local schools. At the end of the course, the Academy will issue the international certificate for Italian cuisine. With this important recognition, students can continue their professional careers in their own country, as "Italian cuisine assistant chefs" or propose themselves in any part of the world, becoming ambassadors of our gastronomic culture. The opening of the first Academy headquarters in Sharm el Sheik in a dream location is expected by 2025, in collaboration with the major hotel chains on site, “Stay tuned”!!!

Upon completion of the ANPA Courses, through the Tourism Federation CON.FE.PI., a professional certificate pursuant to Law 4/2013 for the professions in the Food & Wine sector will be issued to all participants. About us

Executive Chef Bruno Brunori, who recently joined the ICC family, the Italian Culinary Consortium, as Councilor for the Lazio Region, is the founder of the Academy of Italian Cuisine which bears his name.
Bruno Brunori's passion for cooking is in his family's DNA. He is originally from the Marche region. His family has been in the restaurant business since 1978, the year in which he opened Casa Brunori, the family restaurant, which he continues today with great pride.
BRUNO BRUNORI

Born into a family of travel agents, his father Fernando was an important commercial manager of airlines, and is today an ITS BACT teacher in Naples, Vice President of the Tourism Federation of CON.F.E.P.I. , global tourism business consultant. For over forty years he has worked in the tourism sector and has held managerial roles of primary importance in the largest companies in the sector. He has also gained important experience in the training sector of "group" work management. Finally, his numerous consultancy experiences in the hotel sector have allowed him to build a 360° wealth of experience in the hospitality sector.

With over 40 years of experience, he has visited many countries and founded the main Italian tour operator for the Caribbean in the 1980s, and in the 1990s he specialized in trips to Brazil. He managed the programming of the third national generalist operator and two multinationals operating in Egypt and in the Türkiye/Mediterranean area, collaborating with local governments. Over the last 15 years he has dedicated himself to incentive trips for companies in the Auto, Cosmetics, Fashion and Food and Wine sectors. He was recently appointed coordinator of the Italian Academy in the European Confederation of Professionals.
PIERLUIGI DORO

He is the historical manager of Palazzo Venezia in Naples. The Palace, an important historical structure in the center of Naples, a place of great tourist interest, has today become, thanks to Buccino's management, a true cultural and educational centre, without losing the proven philosophy of hospitality. The experience in the field of organizing events and training campuses that Buccino has gained over time makes him a point of reference at a national level. His experience ranges from the organization of exhibitions, book presentations, training courses to the organization of events functional to the development and knowledge of the territory, combining high professionalism with local customs, promoting the values of Neapolitan culture.

AGREEMENT ANNOUNCED BETWEEN

The Cooking Academy, led by Bruno Brunori, was born with the aim of uniting the different souls of the members, to develop a new training project based on the valorisation of the basic principles of the Mediterranean diet and consequently of Italian cuisine.
The Academy was born in the Castelli Romani area precisely to capture its tradition and gastronomic culture. The Academy's mission is to convey to young people approaching the courses the ability to prepare the dishes on the Castelli Romani menus, which represent an excellence of Lazio cuisine.
By attending the courses, students will be able to learn, through the wisdom of Chef Brunori, all the secrets to obtaining that mix of flavors and aromas that have always distinguished the hilly area south of Rome. The recipes that the Chef will teach and that the students will export in their professional career will also be testimony to the cultural traditions of the area.
The Bruno Brunori Academy of Italian Cuisine has intercepted the ever-growing demand for jobs from companies in the tourism and hospitality sector and therefore aims to provide a prompt and professional response. Its purpose, beyond training, is to bring together supply and demand for qualified work.
The agreement with ANPA, a school of absolute prestige, today combines experiences and professionalism of the highest level, capable of providing students with complete preparation to be placed in roles of primary importance in the world of work.
